Mexican food differs a lot when you change regions:  Santa Fe is different than Tex-Mex which is different than RGV.  Here in the RGV I encounter the practice of offering the Gringo one menu of choices, while locals get another menu.  I&#8217;ve encountered the same practice in the Asian districts of Seattle and San Francisco.<\/p>\n<p>The thinking is that the valued Winter Texans have different taste choices from the local Tejanos when it comes to heat and meat varieties.  That&#8217;s true, but sometimes it&#8217;s hard to communicate what I want, and I get what the server thinks will make me happy.  It&#8217;s usually good, and it doesn&#8217;t happen often, but I wish they didn&#8217;t do this.<\/p>\n<p>I&#8217;m moving to Arizona on Saturday.  I can take doing the Quartzsite thing every other year, and I can see some friends in that area.  I&#8217;m allowing 1 or 2 weeks to get there, watching the weather closely before moving.  West Texas is notorious for high winds, and it can get real cold in New Mexico.
